Green salad with cabbage


White cabbage salad with apples and celery

Clean and wash cabbage, remove the core. Finely chop the cabbage, lightly salt and rub it with your hands to make it soft. Squeeze out the released juice. Slice the peeled apples, cut the celery into thin 4-5 cm long slices. Mix everything together, put in a salad bowl, dress with vinegar mixed with sugar and leave for 30-40 minutes. It is desirable to add 1 tbsp. of vegetable oil.

Salad is served with fried and boiled meat dishes, fried and boiled fish, as a side dish to cold meat and fish dishes, as well as an independent dish.

For 500 g of cabbage - 1 apple, 1 stalk of celery (salad or root), ¼ cup of vinegar, 2 tbsp. sugar.

Red cabbage salad with apples

Clean and wash the red cabbage, cut it into 4 parts and, having removed the pith, chop it very thinly (with a sharp knife or on a shredder). Put the cabbage in a pot, pour boiling water over it, cover it with a lid, let it stand for 20-30 minutes, then cover it with a sieve or colander. Then pour cold water over it, squeeze, put it in a salad bowl, dress with vinegar, salt, sugar, mix and let stand for another 20-30 min. Add apples, peeled from skin and cut into slices or cubes, to the ready salad. You can add 1 tbsp. of vegetable oil to the salad.

Cabbage can not be scalded with boiling water, but salt and rubbed with hands until it becomes soft and does not start to release dark juice. Then squeeze the cabbage and pour vinegar over it, add sugar and stir. After a few minutes, the colour of the cabbage will become bright.

Salad is served with meat, game, poultry and fish. For 500 g of cabbage - 2 apples, ¼ cup of vinegar, 2 tbsp. sugar (to grind cabbage - 1/2 teaspoon of salt).

Salad of cauliflower, fresh cucumbers and tomatoes

Washed and divided into florets (small bumps) cauliflower dropped into boiling salted water and cook until soft (but do not overcook). Peel fresh cucumbers from their skins and tomatoes from their stalks. Cut into slices. Chop the green onions. Mix the vegetables and dress with sugar, salt and a mixture of mayonnaise and sour cream. Place in a salad bowl and decorate with beautifully sliced cucumbers and tomatoes.

For 500 g of cauliflower - 200 g of cucumbers and tomatoes, 1 small bundle of green onions, 12 tbsp. of mayonnaise and sour cream mixture.
