Salads with sweet pepper


Tomato, cucumber and sweet pepper salad

Wash cucumbers and tomatoes in cold water. Peel the cucumbers from their skins. Cut out the stalks of the sweet peppers and carefully remove the seeds. Rinse the peeled onions in cold water. Cut cucumbers and tomatoes into rounds, peppers and onions into rings. Wash and finely chop the coriander, basil and parsley. Put the vegetables in rows in a salad bowl, salt, sprinkle pepper to taste, decorate with onion rings, pour vinegar and sprinkle with chopped spicy herbs.

For 100 g tomatoes - 50 g pepper, 100 g cucumbers, 1 onion head, spicy herbs.

Salad with red bell peppers, green peas and rice

Boil crumbly rice. Bake red sweet peppers in the oven, and cut them into long strips.

Pepper, cut into long strips. Boil the green peas. Mix the vegetables with the rice, salt to taste. Dress with a sauce of vegetable oil, vinegar and sugar. Place in a salad bowl and decorate with egg slices and parsley greens. This salad can be prepared faster using pickled tinned red peppers and tinned green peas, with less vinegar added to the dressing.

For 1 cup of cooked rice - 6 red pepper pods, 1 cup of cooked green peas, 2 tbsp. of vinegar and vegetable oil each, 1 egg.

Aubergine salad with onions and green peas

Wash aubergines, peel off the skin, cut into slices and lightly stew in a pan in heated vegetable oil. Dice the washed onions, put them into the stewed aubergines and immediately remove them all, cool, mix with peas, finely chopped apple and diced eggs, and season with salt, lemon juice and sugar to taste. Place in a salad bowl and pour the sauce made of mayonnaise with sour cream, mustard and garlic. Decorate with tomato slices.

For 300 g aubergines - 150 g onions, 100 g tinned green peas, 2 hard-boiled eggs, 1 apple, 1/2 cup mayonnaise, 1 teaspoon of prepared mustard, 2 garlic cloves, 1/2 cup sour cream, 1 tbsp. vegetable oil.
