Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 zucchini, chopped
- 1 can (400g) diced tomatoes
- 1 can (400g) cannellini beans, drained
- 4 cups vegetable or chicken broth
- 1 cup pasta (small shapes like elbow or ditalini)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley and Parmesan cheese for garnish
Instructions:
- Heat the olive oil in a large pot and sauté the onions, garlic, carrots, and celery until softened (about 5 minutes).
- Add the zucchini, tomatoes, beans, broth, oregano, and basil. Bring to a boil, then lower the heat and let it simmer for about 20 minutes.
- Add the pasta and cook for an additional 10 minutes, or until the pasta is tender.
